Thunnus albacares


  • Yellow Fin and Big Eye Tuna from Hawaii
  • Skin on, belly flap off
  • Medium to dark red meat that cooks to a tan color
  • Firmness is an indication of fat content, not quality
  • Ahi loins, or “fillets” range in size from approximately 5 to 9 pounds

Handling & Storage

  • Store in cooler between 1º to 4°C, with bloodline facing down
  • Keep tightly wrapped as exposure to air will cause Tuna to turn brown
  • Never allow Ahi to sit in melt water, as it will discolour the flesh
