  • Farm raised in the Northwest Territories from the Tree River and Nauyuk Strain
  • Fillets are skin on, boneless
  • Fillets range in size from approximately 12 to 20 ounces
  • Flesh colour is a distinct orange, with high fat content

Handling & Storage

  • Store in cooler between 1º to 4°C
  • Extra slimy skin is natural protection for these Arctic fish and not an indication of quality
  • Minimum shelf life is 3 days from delivery

Cooking Tips

  • Generally, cook char as you would trout
  • The flavour is much milder than that of salmon
  • The high fat content keeps char moist
  • Best suited for sautéing, broiling, baking, or grilling
  • Cook with skin on, but remove skin before serving, as it will be tough
