Coryphaena hippurus


  • Mainly from Hawaii, Mahi Mahi is common to tropical, and sub-tropical waters around the world, preferring waters above 20ºC
  • Also known as Dorado or Dolphinfish, yet is unrelated to the marine dolphin
  • A fast growing fish, skin on fillets are usually between 3 to 8 pounds
  • Has a sweet, mildly pronounced flavour similar to swordfish
  • Flesh is pinkish to grey-white, and cooks up off white with a large flake

Handling & Storage

  • Keep product well iced and store in cooler between 1º to 4º C, allow water to drain
  • Do not allow fish to have direct contact with ice
  • Minimum shelf life is 3 days from delivery

Best availability is late spring/early summer
