  • Fillets are cut from troll-caught, frozen-at-sea refreshed (thawed) Queen Charlotte Coho

Handling & Storage

  • Refreshed fillets have less elasticity due to having been frozen, so careful handling is a must
  • Always pick up fillet(s) with two hands – Coho’s soft, delicate texture will firm up beautifully when cooked
  • Process immediately and store well-iced. Avoid leaving product sitting in ice melt. Re-ice daily.
  • Minimum shelf life is 3 days from delivery
