Handling & Storage

  • Refreshed fillets have less elasticity due to having been frozen, so careful handling is a must
  • Always pick up fillet(s) with two hands, to reduce any gaping
  • Process immediately, and store well-iced. Avoid leaving product sitting in ice melt. Re-ice daily.
  • Minimum shelf life is 3 days from delivery
