  • Yellow Fin and Big Eye Tuna from Hawaii
  • Skin on top loin has no belly seam
  • Medium to dark red meat that cooks to a tan color
  • Firmness is an indication of fat content, not quality
  • Ahi loins, or “fillets” range in size from approximately 5 to 9 pounds

Handling & Storage

  • Store in cooler between 1° to 4° C with bloodline facing down
  • Keep tightly wrapped as exposure to air will cause tuna to turn brown
  • Never let Ahi sit in melt water, as it will discolour the flesh
