  • These are small size, 3 to 4 inches long
  • Hard shelled, deep cupped, consistent shape
  • Harvest date and harvest area are listed on accompanying shellfish tag

Handling & Storage

  • Store in cooler between 1º to 4° C, covered with a wet cloth and ice, allow water to drain
  • Keep accompanying shellfish tag on file for 90 days
  • Ensure all oysters are alive. Discard any that do not close when tapped with finger.
