  • From Gorge Harbour and Baynes Sound, BC
  • Flavour is mildly briny, and finishes light and sweet
  • X-small size is 2 to 3 long
  • This is the preferred size for raw half shell use
  • Harvest date and harvest area are listed on accompanying shellfish tag

Handling & Storage

  • Store in cooler between 1° to 4° C, covered with a wet cloth and ice, allow water to drain
  • Keep accompanying shellfish tag on file for 90 days
  • Ensure all oysters are alive. Discard any that do not open when tapped with finger.
